I hope your family enjoys the mix of different crunches and the sweetness of this bar. Please note, feel free to adjust the quantity of honey or chocolate if you wish to increase or decrease the sweetness. · 2 cups of cooked popcorn* · 1/2 cup buckwheat groats (replace with pepitas or other nut if you prefer) · 1 cup sunflower seeds · 3 tablespoons honey (best from your local bee keeper) · 1 tablespoons of tahini or 100% peanut butter · chocolate (I used some chocolate buttons) · dollop of cream or good splash of milk
1. Preheat your oven to 180 degrees. Line a lamington tray (rectangle). 2. In a large bowl, mix together your cooked popcorn, buckwheat groats and sunflower seeds. 3. In a small bowl, mix together the tahini/peanut butter with the honey 4. Add the honey mix into the popcorn mix. 5. Combine until all the popcorn mix is coated in the honey mix (this can be a fun activity for kids to do with their hands). 6. Pour into the lined tray, and press down firmly using the back of a spoon 7. Bake for 15-20mins until golden brown. 8. About 5 minutes to go, pop your chocolate into a glass bowl (I use a glass pyrex jug). Add in a dollop of cream or splash of milk. Pop the glass bowl into a saucepan of boiling water and stir your chocolate until melts. 9. Remove the bar out of the oven, pour over the chocolate and smooth it all over the top. 10. Allow to cool for 5 minutes, then pop into the freezer for 1 hour. 11. Remove from the fridge and cut into square lunchbox sized pieces or bars. |
